The best no knead Ciabatta recipe Ever!

So I have been on a quest for the perfect Ciabatta bread recipe. I love this bread, I love the big holy texture the hard crust and also the Taste.

Now I usually stick to my white bread recipe and my whole grain recipe which is all very well for everyday consumption, but its not really that special when it comes to entertaining or bringing back memories of the good food we have had in Italy over the years!

 

The recipe is really simpler and kind of looks after itself once you have mixed all the ingredients, don’t let the 18 hour rise put you off, just set it to one side and think of what good is to come!!

What you need

  • ·         4 cups of strong bread flour
  • ·         1 ½ Tea spoons of yeast
  • ·         1 ½ Tea spoons of salt
  • ·         2 cups of water

That’s it, now on to what you do with the ingredient..

 

1.     Put everything in a large mixing bowl

2.     Mix everything until you have one ball of dough and the bowl sides are pretty clean, the dough will still be quite wet though which is GOOD!!

3.     Cover with foil, cling fil or a clean Tea town

4.     Wait 18HRS

5.     When you return after 18HRS you will find that the dough has grown

6.     Using a spatula pull the dough away from the sides of the bowl

7.     Flour a baking tray

8.     Empty the dough onto the baking tray and shape

9.     Leave to rise for 2hrs

10.  While the bread is rising heat your oven to approximately 230 degrees

11.  Bake in the oven for 25/30 Min

12.  When baing time is over remove from the oven and place on a cooling rack (The bread should be a nice brown colour and sound quite hollow when tapped)

DO not cut the bread while it is HOT it will collapse, I know its hard, but the wait will be worth it.

And that’s it, just sit back butter and enjoy!
